Red Velvet Cake Mix Cookies
When it comes to Christmas cookies for me, the easier the recipe the better. Easier cookies = more cookies. These beauties are made with just 1 box of red velvet cake mix, powdered sugar and oil and eggs! Seriously, so easy. Plus, they’re festive and pretty too! They were a favorite of my late Father-in-law. I am certain one year he ate the whole batch (which wouldn’t be too hard to do) 🙂
Makes 24
What you need:
1 Red velvet cake mix
2 Eggs
1/3 cup of vegetable oil
A bowl of powdered sugar
What you do:
Mix everything except the powdered sugar in one bowl
Using a cookie scoop or a tablespoon scoop batter into balls and roll in powdered sugar
Place on cookie sheet and bake for about 10 minutes at 375 until the tops look dry and cracked. (They won’t be dry, they’re so moist and delicious!)
