One Pan Pork Chops with Apples and Onions
We’re really feeling this one-pan cooking lately! It’s so simple and cleanup is a breeze. Today George is in the kitchen doing bone-in pork chops with apples and onions in the cast iron skillet. These pork chops are amazing, so many flavors. They’d be great paired with roasted squash or sweet potato.
Serves 2
2 center-cut bone-in pork chops
1 Gala apple halved and sliced
1/2 of a medium-sized sweet onion halved and sliced
3/4 cup of chicken stock
1 tbsp dijon mustard
1 ‘poultry bundle’ of fresh herbs (or dry thyme, rosemary and sage)
Salt and pepper
Cook the pork chops for about 4 minutes on each side then remove from the pan and set aside. Add apples and onions to the pan and cook until softened, then stir in herbs. Combine chicken stock and mustard and add to the pan. Put the pork chops back into the pan and continue to simmer for 2-3 more minutes.
