Minnesota Sushi Dip

Last weekend I needed a quick dip to bring to the lake.  Something easy to make and transport as well as keep chilled in a cooler.  I mixed up this dill pickle dip and it was a crowd pleaser!  You know the classic ‘Minnesota Sushi’ recipe with ham, cream cheese and dill pickles?  This is kind of a ‘dip-version’ of those yummy roll ups!

What you need:

2 blocks of cream cheese

1 cup chopped deli ham (this is optional)

3 tbs of dried ranch seasoning

3 tbs of fresh chopped dill

1 cup of diced dill pickles (I used whole pickles so they didn’t lose their texture)

2 tbs of sliced green onions

What you do:

Allow cream cheese to come to room temperature on the counter for about 20-30 minutes.  Then, just mix the ingredients together and chill for 1 hour.  Spread on crackers or vegetables.
