Now that October is here, we couldn’t resist a pumpkin-flavored sweet treat! These mini pumpkin cheesecakes with Oreo cookie crust are SO good and SO easy to put together! You can even have your kids help with this simple treat.
Here’s what you need: (Makes 24)
Candy corn pumpkins (optional)
2 8oz. blocks of cream cheese- softened
1/2 cup sugar
1/2 pumpkin puree
1 tsp. vanilla
1/2 tsp. cinnamon
dash of nutmeg
dash of ground cloves
Whipped cream topping
24 sandwich cookies in your choice of flavor (we used golden and chocolate)
Add the cream cheese, pumpkin, vanilla and spices and mix until creamed. Add eggs and mix until combined.
Place cupcake liners in a muffin tin and put one cookie in the bottom of each. Fill each liner 2/3 full with batter. Bake for 20 minutes at 350 degrees.
Let cool on counter, then chill until firm. Top with whipped cream and candy corn or leave them plain!
