Food Truck Hub On Riverfront Opens Next Week

The much anticipated Food Truck Hub on North Riverfront Drive in Mankato will open next week.

Developer Dain Fisher tells SMN that the grand opening will be held on Thursday, September 14th, opening at 11am and going until about 10pm. The opening will include a number of food trucks, including Doc E’s BBQ, El Tacazo Mexican Delights, and Lola – An American Bistro.

Fisher says there will also be music from the bands Just Mirlyn from Mankato, Woodblind from Duluth and MR DR out of Minneapolis. It’s also possible that El Tacazo will bring a mariachi band for the grand opening celebration.

The event will also coincide with an open house (4p-7:30p) at the MSU-Mankato Division of Strategic Partnerships unit, which is next door to the Food Truck Hub in the Hubbard Building.

Following the Thursday event, the hub will be open until it’s closed down due to cold weather, likely sometime in October. Fisher says the site is expected to have at least 1 or 2 trucks rotating in and out of the location on regular days and then up to 7 trucks during special events.

In addition to the food trucks confirmed for the grand opening, Fisher says a number of others have expressed interest with offerings including mediterranean, cuban, kabobs, wood-fired pizza, burgers, and he’s hoping to bring in some other non-traditional food truck fare. That could include a food truck like Toast in Madison, Wisconsin, which serves a variety of paninis.
